Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. You will participate in a guided tasting of extra virgin olive oil to learn how to recognize its quality, flavors and aromas through tasting with the classic blue glasses of a professional taster. We will offer you a taste of different extra virgin olive oils (depending on the availability of the harvest) and of the range of natural flavored products of our production, made with essential oils extracted in a natural way. After a first taste in purity, we will offer you tasty bruschetta of local durum wheat bread, to be seasoned with the tasted oils, typical friselline dressed with our olive patè, a taste of dried tomatoes and vegetables in oil, local honey, our almonds and a glass of local rosé wine. After our welcome we’ll offer you a no alcoholic drink with fresh fruit if you prefer and you will also enjoy our pool waiting for the beginning. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Il Salento sul mare a bordo di Eleutheria
Ci troveremo al porto di Otranto o su richiesta un altro porto in Salento (Frigole, San Foca, Gallipoli, Santa Maria di Leuca) dove imbarcheremo sul mio gommone di 6,5 metri e da lì decideremo assieme l’itinerario sulla base delle condizioni del mare, vi porterò a fare il bagno dove l’acqua é più blu, lontano dal caos delle spiagge affollate. Vi offrirò un rinfresco a base di acqua, bibite, frutta fresca e frise (tipico pasto salentino) bagnate nell’acqua di mare, come fanno i pescatori da oltre 2 secoli. Pescherò dei ricci che mangeremo a bordo, e se avremo fortuna, proveremo a pescare qualche pesce facendo un po’ di traina o bolentino. Trascorrerete così una giornata differente, all’insegna del mare e della sua semplice bellezza...la tintarella é assicurata!Il mio gommone é equipaggiato di tutte le dotazioni di sicurezza entro le 12 miglia, doccia con acqua dolce (50litri), ghiacciaia, cuscineria prendisole con spugne, tendalino parasole, fornelletto per un ottimo caffè a bordo e tutta la strumentazione necessaria per la pesca e la navigazione.

Flavors and aromas of the oven at Trullo
The experience will take place in a typical context of the Apulian countryside where there is a trullo in which at certain times of the year it will be possible to eat. During the experience the participants will put their hands in the dough and will delight in the preparation of some typical Apulian specialties: bread, focaccia and stuffed aubergines (in summer) or omelette with seasonal vegetables. The preparations will be cooked in a wood oven which with its scents will fully evoke the Apulian peasant culture and traditions. I will provide participants with gastronomic and above all cultural information through which they will be able to feel a concrete part of a journey of discovery of the most authentic Apulian traditions. After having prepared all the participants together comfortably seated outside, under the patio, or in the shade of an ancient olive tree in good weather, or inside the kitchen heated by a wood stove or inside the trullo in winter or with cold days, they will be able to taste the fruit of their labor: hot bread, assorted focaccia and stuffed eggplant or omelettes, all accompanied by a generous glass of house wine, to finish with a good coffee and a taste of homemade liqueurs.
