Live fish, crustaceans, and molluscs are staples, prepared in the classic Southern Chinese Canton style: stir-fried, salt and peppered, steamed, or wok fried in a traditional sauce. The restaurant is open late—come at midnight to dine with the cream of Sydney’s restaurant scene. Ask the waiters what special seafood they have that’s not on the menu, and peruse the aquarium of live tanks along the wall. It might be live Queensland scallops, local shortfin eel, or wild king prawns that are off menu but still available.
