If you are stopping in Palma at any point in your trip, this is the place to go for a taste of traditional pastries, the famous Mallorcan ensaïmada, or a delicious light lunch of 'panades'. The master baker-archeologist, as he calls himself, is devoted to reviving Mallorcan ancient recipes and is one of the best bakers in Mallorca and in Spain! They have two shops, both in Palma around the old town.
