Open since 1821, this hotel’s bar proudly declares that Peru’s most famed drink, the pisco sour, was invented here. True or not—Morris Bar also claims the same accolade—bartenders serve up an excellent version of the cocktail (made from pisco, limes, and foamy egg whites) in a wood-paneled room. Given its central location a stone’s throw from bustling Plaza Mayor, the Maury is a calming spot after a long day of sightseeing.
