This famously unremarkable pub was bought by Maurice Terzini, King of the Refurb, of Bondi’s Icebergs and Da Orazio Pizza fame. Now, wine fridges are individually set to suit each varietal, and there’s a Gibson cocktail that replaces onions with pickled Jerusalem artichoke—controversial, but delicious. To eat, do not pass go, just head straight for the sweetbreads. Here, it’s all about an early start. Get to the bar by 6 pm to enjoy prime position in front of wine geek and sommelier James Hird.
