As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. We will take a 2-hour tour through the streets and alleys of the historic center, among classical buildings, baroque churches, and Roman monuments! Lecce is a precious gem, made of clear blue sky and ancient shining buildings, we wonder with the elaborate facades, the masterpiece of our Baroque art, and interiors that erupt with symphonies of angels, cherubs, saints, and flowers! it is an enchanted place, where time seems to have stopped!

We will meet in the room that I have personally chosen for this event. Here 6 bottles of wine will be served, 1 or 2 of white wine, 2 of rosé and 2 of red, produced from typical local grapes such as Negroamaro, Primitivo il Fiano and Verdeca, accompanied by a selection of typical gastronomic products of Salento such as olives, Pizzi, Pucce, Frize, Rustici, and fresh cheeses such as mozzarella and burrata. For each label tasted I will tell you the history of the wine and of the producing cellar, telling you about the production techniques and the history of the terroirs related to the selected wines and I will tell you the history and traditions related to Salento. The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. I will show you how easy it will be to face the different "climbs" of Valle d'Itria with a pedal assisted bike even for those who are not sporty and trained. Il Salento sul mare a bordo di Eleutheria
Ci troveremo al porto di Otranto o su richiesta un altro porto in Salento (Frigole, San Foca, Gallipoli, Santa Maria di Leuca) dove imbarcheremo sul mio gommone di 6,5 metri e da lì decideremo assieme l’itinerario sulla base delle condizioni del mare, vi porterò a fare il bagno dove l’acqua é più blu, lontano dal caos delle spiagge affollate. Vi offrirò un rinfresco a base di acqua, bibite, frutta fresca e frise (tipico pasto salentino) bagnate nell’acqua di mare, come fanno i pescatori da oltre 2 secoli. Pescherò dei ricci che mangeremo a bordo, e se avremo fortuna, proveremo a pescare qualche pesce facendo un po’ di traina o bolentino. Trascorrerete così una giornata differente, all’insegna del mare e della sua semplice bellezza...la tintarella é assicurata!Il mio gommone é equipaggiato di tutte le dotazioni di sicurezza entro le 12 miglia, doccia con acqua dolce (50litri), ghiacciaia, cuscineria prendisole con spugne, tendalino parasole, fornelletto per un ottimo caffè a bordo e tutta la strumentazione necessaria per la pesca e la navigazione.

Orecchiette&Tradizione
Cooking is part of our family traditions. We prepare and cook typical local dishes. Guests are welcome!! You will be the cooks here, preparing orecchiette, sagne, minchiareddrhi under our instructions. You will be equipped with rolling-pins, a table of course, cooking tools and all the ingredients needed in the preparations of our pasta fresca. We will tell you the origins of the different kinds of flours and we will answer all your questions. Then, Pittule will be in turn!! It’s the typical tasty fried food during our Christmas period. We will show you how a Pasticciotto is prepared and you can taste it!! We will hand you a manual with all the recipes written both in Italian and English. Our guests can take everything they have prepared with them, in order to come back home with a little piece of Salento. Other things to note If you have particular tastes, I advise you to call me beforehand to agree on a different menu to be prepared.

Il nostro tour inizia con una descrizione storica della Masseria, successivamente visiteremo la stalla dove si trovano le mucche, attraverseremo il caseificio ed entreremo nelle celle di stagionatura. NEW NEW NEW.... WINTER EDITION SU RICHIESTA POTREMMO PREPARARE UN DOLCE TIPICO IMVERNALE.... I PURCEDDRHUZZI DOLCE FANTASTICO.... E BUONISSIMO..La "Cooking class with Livio" nasce dall'amore per la cucina italiana e per il Salento, terra in cui sono nato e cresciuto. Mi diverte molto l'idea di fare conoscere alla gente le basi della cucina salentina, fare vedere passo dopo passo come nasce la pasta fresca. La mia esperienza infatti, è un full immersion di una durata di quattro ore nell'arte dell'impastare. Scoprirai stupendoti che bastano veramente pochi ingredienti, di uso quotidiano tra l'altro, per realizzare la tipica pasta leccese. Divertimento è la parola chiave della "cooking class with Livio", inteso come curiosità nella scoperta di questa arte. Ti guiderò in maniera pratica nella realizzazione della pasta fresca e con amore per la mia terra vi racconterò qualche aneddoto e curiosità sull'importanza di questa arte per noi leccesi.
