Join me, founder and head brewer of Cervecería Monstruo de Agua, on a journey through sustainable brewing and regenerative farming at our pilot microbrewery nestled in a lush edible forest in the hills of southern Mexico City.
We’ll start our day at Agrotaberna Monstruo de Agua, our agro-pub in Condesa, where you’ll enjoy coffee, hot chocolate, or pulque as I share my passion for sustainability and the rich Mexican terroir. Then, we’ll hop in a van to El Jardín del Axolote, traveling through the stunning landscapes of Tlalpan while discussing Mexico’s unique geological history and the role of small farmers in food sovereignty.
At the brewery, you’ll learn how we craft beers, ciders, meads, and seltzers without preservatives or pasteurization. Taste exclusive brews fresh from the fermentation tanks and savor Bernarda’s homemade mole with heirloom corn tortillas and quesadillas, paired perfectly with our beers on tap.
We’ll end with a walk through our orchard, talking about agroforestry and exploring native plants and their use in herbal medicine and cuisine.
